The natural gas it cooks better and more evenly.

Propane burns HOTTER. You can basically cook the same way with natural gas as you do with propane.

If you have the correct burner set up you will notice little effect on cooking temps. The diameter of the heat elements holes are different for propane than for natural gas. Natural gas is used by people because it’s cheaper and can tap it from a stub if your house/restaurant uses natural gas.
