		<description>We even do small beef roasts! BEST roast I've ever tasted! He'll turn the grill on high to get it all warm and then turn off one side and the other on low.  We did ribs the other day.  Keep them moist, baste often.  and do the same thing, turning off all but one burner, check them often.  Can I come over?  This all sounds super tastey!</description>

		<description>If your grill has a cover, you should be able to.  When using indirect heat, your goal is to never have any part of the meat directly over flames or charcoal. You can only do indirect cooking with a charcoal or gas grill that has a cover.
