Smoking using gas grill: Remove Burner Shield or not?

I have been watching “License to Grill” and want to try smoking some things on my gas grill. on the show, they have you create “smole pouches” (1 part wet wood chips to 2 parts dry in perforated aluminum foil) that you lay directly on the heat source. My grill has a metal burner shield. should i remove it and put the packet directly on the flame or lay it on the burner shield?
