Charcoal on Gas Grill?

I have a gas grill but do not feel like storing the small propane tanks in my car in the parking lot for most the day while im at school - BBQ is later in the day. So could i just use briskettes on my grill as if it was a charcoal grill? ive got two racks - one will be at the bottom where it nromally is and will have the brisketes on top of it, then have the other grill rack on top of the brisketts.
